I’ve been using the weekly menus from the crock pot menu mailer a lot. Probably four nights a week, we try a new recipe. Tonight, the recipe was called Southwest Crock Pot Pork Stew. It had pork loin, zucchini, red bell peppers, salsa, chicken broth, cumin, garlic and a little salt. After cooking it all day, I shredded the pork & put it on tortillas & then topped it with zucchini & bell peppers. It was really good. My kids liked it too, after they quit protesting loudly that they don’t like my new WEIRD recipes and tried it.
